There won’t be a “real” post today. Turns out that I got stuck in the traffic behind an overturned tanker truck. Traffic was absolutely gridlocked. If you’re interested, story here: http://www.mercurynews.com/top-stories/ci_16371873. The clutch on my little car started to overheat and we limped off the freeway and encountered more gridlock. We ended up taking an out of the way mountain road and breezed straight to the In-N-Out burger for dinner. It took 4.5 hours to get home tonight.
My actual plan for dinner was boneless porkchops and homemade applesauce. I made the applesauce last night and it is delicious. I used Fujis, Red Delicious and Gravensteins. Adding some Galas is good, I just didn’t have any of those last night. I just quartered them and removed the cores. I left the skin on. I cut enough apples to fill my crockpot to the top and added a few shakes of cinnamon and 1/4 cup of water and let it go on low all night. Come morning, I just stirred everything to smush the apples up and to mix it all together. If you like your applesauce without the skins, put it through a strainer. Me, I am too lazy for that. I just eat the skin in the applesauce. Delicious.
